Brick Hall Bakery

A production bakery and shop in a restored 1920s tram depot, where customers can watch the bakers through a long glass wall.

The depot’s brick hall was in good shape but had lost its roof lights. We reinstated them, bringing even daylight onto the long baking tables.

Ovens, flour silos and cool rooms are grouped in a new timber box at one end of the hall, leaving the historic space free. The shop counter is a single slab of reclaimed terrazzo.

Waste heat from the ovens warms the shop and the apartments above.
